Pineapple – a nutritious and versatile fruit (fruits, technically) used in sweet as well as savoury dishes. This simple dessert is tasty and quite impressive; it is ideal following a rich meal as the pineapple aids in digestion. To start off choose a firm pineapple and chop off it’s pony-tail. Quarter it and remove the middle core.

Carefully cut around the peel

Then slice into bite size uniform pieces

Sprinkle a little brown sugar on the top and place in a hot oven for a few minutes until tender. Serve as is or with plain ice cream. Delicious!
