To fill 2 peppers (and feed 2 people), you will need:

  • half a glass of wine (whatever’s left over)
  • 200g minced beef or pork
  • 1 tablespoon paprika
  • 2 green/yellow/red peppers
  • one cup cooked quinoa
  • salt and pepper
With a sharp knife cut around the green pepper’s stalk to remove it, along with the seeds on the inside, carefully trying not to break the pepper’s skin while doing so.
Boil the peppers for about 20 minutes, until they just begin to get tender. They will be cooking further in the oven. Scoop out gently and drain.


In the meantime, rinse the quinoa and cook in about 3 cups of water for 20 minutes. Drain excess water if necessary.

Cook the minced meat in wine and paprika until it has all browned.

Preheat your oven to about 180 degrees Celsius.

Mix the meat and quinoa together in a bowl, add salt and pepper if desired; and spoon the mixture into your peppers. You may want to add some cheddar or goat cheese into the mixture too.

Place in an oven dish and cook for about 15-20 minutes until the peppers just start to brown. Give them a few minutes to cool; then cut lengthwise to serve.
