To start off, we’d like to apologize for the phallic formations and deformations found in our photos. No sausage was harmed during the shoot.
You will need:
- Maltese sausage (one per person)
- Chicken breasts or boneless thighs
- Whole grain mustard
A Maltese sausage is made from minced pork mixed with herbs and spices. It can be eaten raw since it is preserved in salt. It is also delicious dried or cooked.
The sausage was boiled for a few minutes so as to cook as well as remove some of the salt.
Open out the breast or boneless thigh, remove any fatty bits with a sharp knife and beat it with a hammer so as to further flatten as well as to tenderize the meat.
Spread a generous layer of mustard and roll up around the sausage. Fix in place with toothpicks.
Cook in the oven for about 20 minutes on 190 degrees until the chicken just starts to brown. It might look disturbing but it tastes really good. Also, it makes for a heavy meal so it’s best to serve with a light side dish or on it’s own following soup.
