This is a way to make your mixed vegetable soup more interesting (and more nutritious).

I used the following vegetables cut up roughly into large chunks:

– half a broccoli head

– half a cauliflower head

– 1 large courgette

– 1 medium sized cabbage

Then added a teaspoon of each of the following:

– turmeric
– fennel seeds
– garam masala (a mixture of coriander, cassia, ginger, cloves, cumin, fennel and dill)
– hot chili
– parsley
– garlic

Add enough water to just cover all the vegetables. Cook for about 40 minutes, until all vegetables are tender. Blend in batches and return to the heat. Taste and season further with salt and pepper, if necessary.

Serve hot with Grana Padano or Parmesan shavings
