Yummmm! the perfect accompaniment to a rather heavy main – or as a starter – or to take with you as a snack at work perhaps?
You will need
- mozzarella di bufala
- pine nuts (roasted)
- nectarines/peaches/strawberries or any of your favourite fruit
- balsamic glaze
The pine nuts will brown very quickly in a dry pan. Simply toss for a few minutes.
Peel and chop up your fruit. We used nectarines this time and the result was superb. Slice your mozzarella and place in alternate layers with the fruit. Throw the pine nuts in and get creative with your balsamic glaze. You can leave this in the fridge overnight so it may be prepared a day early.
