I used to throw these seeds away every time I used a butternut squash, but not any more! Simply place on a baking tray with a sprinkle of rock salt and roast for a few minutes in a hot oven. Be careful, they cook really quickly. Toss a few times to make the roasting equal and they’re done. You don’t even need to bother cleaning the bits of squash off as these will dry up in the oven too. A delicious low carb snack for you to nibble on while your squash cooks 🙂
