I woke up slightly earlier than usual today and among other things luxuriated in the possibility of making myself a fabulous lunch box for later on in the day. I envisioned thanking myself for it later too, as one does.

This is what I made:

You will need (2 portions):

1 cup quinoa

1/2 cup chopped chorizo

1 cup French beans

2 tablespoons grated Parmesan

water

salt & pepper to taste

To make:

Rinse the quinoa under running water then dry fry in a pan until it starts to roast and darkens in colour.

Add the chorizo and fry for 2 minutes, stirring.

Add enough water to cover and cook for about 15 minutes.

Add the French beans, salt and pepper and cook for another 5 minutes. Add more water if necessary if this has dried up.

Add the Parmesan and stir once again – taste to check garnish.

Serve hot or cold.
