This is one of the things you can make with a quinoa salad. You can buy spring roll papers that are quite easy to use, as long as you’ve got a bit of patience lying around.

Find a large dish in which the paper easily fits and fill it with 1cm of hot water. Wash your hands well before you start. Soak the paper in the dish for a few seconds, it will start to soften and turn transparent. When it is soft enough, gently lift it out and lay it on a clean dishcloth.

Place 2-3 tablespoons of your desired filling in the center and then fold as follows:

We served these as shown, but you may also deep fry your spring rolls. If you decide not to fry them just beware that the rice paper will be quite sticky, so don’t place them so that they are touching each other.

Also note that if you’re making a few of these, the water will start to cool down and will not soften your papers sufficiently. You may need to change the water for every 3-4 spring rolls that you make.

Serve with a dipping sauce if desired.
