This is a really quick and simple dish that I first tried in a tapas bar in Barcelona. it takes no more than 5 minutes to prepare and makes a great snack or side.
Wash and dry a handful of Padron peppers. These are small green capsicums grown in Padron, Spain.
Next, heat some olive oil in a small pan. Drop in the peppers and fry, stirring frequently. Make sure the peppers have been dried before frying them, otherwise any water will make the oil sputter.
Once the peppers start to blacken, remove from the pan, place on some tissue paper, and sprinkle generously with rock salt.
