Remember this post about pickling eggs? These will be ready for consumption in about 7 days. A good way to use them is in a salad, for a tangy unusual twist.

Here I quartered the pickled eggs, then combined with:

– chopped pears

– chopped tomatoes, deseeded and sprinkled with salt and pepper

– parmesan shavings

– whole olives

kamut pasta (omit for a low carb version)

– a drizzle of olive oil
