Sometimes the good old recipes are still amongst the favourite comfort dishes. With time and repetition you also develop your own idiosyncratic ways of varying the dish too. This is our latest version:

You will need:

  • 250g of ordinary or fresh egg pasta
  • 3 eggs
  • 1 tub ricotta
  • tabasco sauce
  • salt and pepper

In a bowl mix your eggs and ricotta thoroughly. Add some drops (or a good dollop) of tabasco sauce. Boil water and cook the pasta. Drain. Return to the pan and add your mixture to the pasta, stirring for a few minutes until the eggs are cooked. Serve hot and add salt and pepper to taste. The above quantities make 2 very generous portions of pasta. Quick, easy, tasty and nutritious too. The traditional dishes live on! šŸ™‚

    mmmm I love this dish, but fail at making it cos of the eggs *sigh*

    I usually have it with the plainest of tomato and garlic sauces and tastes absolutely fantastic!

      really? Well in my head it’s something mum used to make when we were younger especially- and to this day she still makes it very often. Sometimes I really feel like one of these ‘childhood’ dishes.

    YAy!!! i love this stuff! šŸ˜€ My dad makes it pretty much as above, mum adds a plain tomato/garlic sauce too… i love it both ways <3

      I’m finding out that a lot of people make it the same way, including the addition of a tomato/garlic sauce. It’s so comforting in a way šŸ™‚
