This recipe is all over the internet with many variations. This is my take on it. I loved it because I didn’t need to dirty half the kitchen to make main and sides. I also loved it because it produced a completely different result to my usual chicken dishes. Given the nature of the ingredients I was expecting it to turn out really salty, but the taste of sun dried tomatoes wasn’t overpowering once cooked.

You will need (for one person):

  • one chicken thigh / two breasts (depending on size, as you can see in the pictures that I had a large thigh)
  • one large onion, chopped
  • 3 cloves garlic, diced
  • 500ml chicken stock
  • 1/2 cup balsamic vinegar (omit for low carb version)
  • 1 cup sun dried tomatoes, drained and chopped
  • salt and pepper to taste (I omitted the salt)
Preheat your oven to 200 degrees Celsius.
Caramelize the onions and garlic in a teaspoon of coconut oil or vegetable oil. Add the chicken and cook for a few minutes on each side to brown the outside. The inside doesn’t need to cook at this point.
Place all the ingredients in an oven dish and cover with a lid. Cook for 40 minutes. Serve the onion/garlic/tomatoes (draining if necessary) as a side to your chicken.
