One idea.. two very different recipes – just goes to show how easy it is to achieve variety in your cooking!
You will need:
Green/orange /red peppers
Roasted Sunflower seeds
Freshly ground pepper
As in the previous recipe, cook your pasta till it’s al dente and add some olive oil to avoid it sticking. Let it cool.
Chop up your veg, add the seasoning and basil and mix thoroughly.
Roast the sunflower seeds in a dry pan for a few minutes and add to your mixture. When the pasta cools down or right before serving, mix in with your veg. Serve cold. This is an ideal snack for packing for work or the beach as it tastes good cold and keeps for a few days in the fridge. I made it in a large batch and enjoyed it over a couple of days.
