The appearance of this soup was rather unsavoury but the taste was delicious; and seeing that I made it up as a tangent to my meat sauce, I was rather pleased with the result.
You will need (for each person):
– a ladle-full of meat sauce (hot)
– 100ml single cream
– 1/2 to 1 teaspoon seasoning. I used this mixed seasoning, but you may use whatever you prefer, including 1/3 of a cube or some stock.
– 1/2 an avocado, mashed
– 1/2 a tomato, deseeded and chopped
– 1/2 a cup of mixed beans
Prepare the “surprise” part by peeling an avocado and mashing one half with a fork, directly in the bottom of your serving bowl. Top up with your chopped tomato.
In a pan, add the heated meat sauce to the single cream and herbs, cook until it is piping hot throughout. Add the beans and cook for a further 2-3 minutes until the beans are heated through.
Serve your soup over the avocado/tomato combo.
