You will need:

  • a bunch of friends ready to have fun
  • rum
  • crushed ice – get ready to hear *bang bang bang*
  • tonic / lemonade
  • chopped lemon
  • chopped fresh mint
  • brown sugar

Mix about one tot for each person in a jug. Add 2 tablespoons of brown sugar or according to taste. Crush the lemon, ice and mint together before adding the liquids to bring their juices out.

If you don’t like rum or you’ve run out, this cocktail also works with vodka. You will barely notice the different.. or was it just us? 😉

    For mojito I make simple syrup instead of just plain sugar

    Simple syrup is quite easy to make. Here’s the recipe.

    * 2 parts sugar
    * 1 part water


    1. Bring the water to a boil.
    2. Dissolve the sugar into the boiling water, stirring constantly.
    3. Once the sugar is dissolved completely, remove the pan from the heat. (Note: Do not allow the syrup to boil for too long or the syrup will be too thick.)
    4. Allow to cool completely and thicken, then bottle.

      Do you use white sugar or brown for that? It came quite good with the brown one. I’m guessing it will be sweeter with the syrup?

    I use white sugar for the syrup. Only a bit of extra sugar is then needed in the final mixture.

      Ah I see what you’re doing here… However with brown sugar you will probably achieve that same caramel taste without needing to make a syrup. Try it 🙂
