Look away and don’t try this at home!!
Still there? You might regret this; you have been warned.
Do you know when sometimes you get a craving for cake (it rarely happens to me, but I hear it’s a common occurrence in the population at large) but you don’t want to get flour all over the kitchen and cake dough in every unimaginable corner of the house? What, is it just me? 🙂
Much to my detriment, I’ve discovered that it’s very simple to satisfy this craving with a few ingredients, a mug and a microwave. And one tablespoon.Â
I found this recipe here, but obviously had to tamper and experiment with it before I was satisfied. I had a look at the ingredients and decided to change some of them. And on a stormy Sunday night in September I also realised that I had all of these ingredients in my cupboards. There were no excuses to be had really.
In one mug place:
3 tablespoons coconut flour
3 tablespoons dark cocoa powder
3 tablespoons vegetable oil
1Â tablespoon agave syrup
3 tablespoons milk
a dash of vanilla essence (about 1/2 a teaspoon)
a pinch of baking soda
Mix everything together thoroughly and place in the microwave on high for 2.5 to 3 minutes. It will be VERY HOT when it comes out and might deflate slightly after having puffed up whilst cooking. Let it cool for a minute before you dig in.
PS: Don’t expect a magical cake. Don’t take it too seriously, it’s just a cake in a mug. You made it in less than 5 minutes and you only have one mug to clean. Unless you managed to spill milk all over the kitchen counter, that is.
