One of  the best things (and there are quite a few) about keeping this blog is that we can easily go back to a recipe to repeat and improve upon it. This fact is aided and encouraged by friends’ fascination and loyalty to it – for which we are very appreciative! One of the greatest satisfactions is getting told that someone has tried one of our recipes successfully. And even improved up on it themselves! The ball bounces back and forth and so this time we decided (read: were strongly encouraged) to take our simplz salad and try it again with some added touches suggested by our culinary genius friend Lex. First off: I really thought that this salad needed more colour so I laid a bed of rucola at the bottom.

Instead of nectarines we opted for peaches this time and layered them haphazardly with the mozzarella di bufala slices

So far, so good. Now the Lexual touch – asparagus wrapped in parma ham. Cook the asparagus for a couple of minutes before wrapping them in parma ham slices. At this point you can either throw them on top of your salad or cook them a further few minutes with the ham wrapped around them. Once that is done add roasted pine nuts and sunflower seeds and decorate with balsamic glaze for that extra zing.

I’m pleased to report that the whole thing was hoovered in some minutes… 🙂

    that ball of mozzarella gives me a weird kind of pleasure hehe.

    Some of my fave ingredients here, parma ham, bufola mozz, asparagus…:)

    nomnomnom… Have never tried peaches/nectarines in salad… must do!!

    mmm speaking of fruit and cheese, now i feel like a walnut/gorgonzola salad with pears and rocket. nom!
