A few months ago we made some absolutely divine fish fritters, but for some reason I lost the photos and we couldn’t write a post. Once again, we were faced with the question of what to do with the leftovers – we had some grilled chicken breast and mashed potatoes, and a batch of fritters immediately sprang to mind. You can make these with fish, chicken, vegetables or even just plain potato.

Chop or shred the chicken breast into small pieces. Next beat an egg and add it to the mashed potatoes.  Mix in the chicken and season with salt, pepper and some parsley if you wish.  You should aim for a stiff consistency that will allow you to shape it into small patties without it falling apart.

Cook these in a shallow pan until they are golden brown on both sides and serve warm or cold.
