Kale is very trendy at the moment and with good reason. I can’t help but quote this website – Move over Popeye and make room for the “queen of greens,” kale. Super nutritious, versatile and tasty – the leafy green is an amazing vegetable.
I’d heard of kale chips and how good they were, but I didn’t understand the craze until I tried it. So simple. Try it!
Wash and dry the kale well, and tear off chunks of leaf. You want to get rid of the stalk as this will prevent the leafy bits from crisping up (by providing too much moisture).
Set your oven to heat to about 170 degrees.
In a large bowl place all your leaf chunks, then add a good dollop of olive oil, some rock salt and freshly ground pepper and finally a light sprinkling of soy sauce. Mix everything up so that all the leaf surfaces are coated.
Place the leaves on a flat baking tray in a single layer and bake for 15 minutes until crispy, flipping over half way through.
