Set your oven to 150 degrees celsius. Evenly slice (I prefer thin slices) a large courgette and place in a deep oven dish.
Sprinkle herbs and spices of choice. I have tried two options so far:
– cayenne pepper, oregano and thyme
– garam masala, lemon pepper and cayenne pepper
Add 2-3 tablespoons of olive oil.
Place in the oven for about 20 minutes, turning around half way through, until they begin to brown slightly. Carefully remove the dish from the oven – it will be very hot! Add cubes of feta cheese and place back in the oven for about 5-10 minutes until the cheese starts to brown too.
Serve hot or cold with meat or salad. This recipe works very well with fresh asparagus too. You may omit the herbs/spices if you prefer or just use salt and pepper if your taste buds are less adventurous.
