Do you know when a recipe is a keeper? It’s when you can’t wait to have the leftovers or when you can’t wait to make it again! This was definitely the case. I’d been browsing a few recipes about roasting broccoli and they varied from the very simple (salt, pepper, olive oil) to the more complicated ones. I decided to try out my own mixture.
Cut up your broccoli into bite-size (or 2 bites perhaps) florets. In a large bowl (you are going to need to add all your broccoli pieces into this when the mixture is ready) mix the following together:
– 1/2 cup olive oil
– a pinch of dried thyme
– 1 tablespoon lemon pepper
– a pinch of rock salt
– 1/3 chopped chilli or 1/2 teaspoon dried chilli flakes
– a pinch of brown sugar
Toss the broccoli and mix thoroughly with your ingredients. Lay this on a baking tray, pouring any remaining mixture on top. Roast the broccoli in a preheated oven for 10-15 minutes or until they just start to brown. The end result will be juicy and crunchy.Pin It
