When there really is almost nothing on your shelves, it is still possible to make soup and this recipe if proof of that!

You will need:

  • onions, sliced
  • 1/4 cup of butter
  • 1 tablespoon flour
  • 1 teaspoon sugar
  • 1/2-1 cup of wine, preferably red but white will do too
  • veg/beef or chicken stock
  • water
  • 1 teaspoon cornflour dissolved in some water

Melt the butter in a pan and add the sugar and flour. Add the onion and sautee for about 10 minutes.

Add the wine and continue cooking for a few minutes. Then add the water and stock and bring to the boil. Cook for about 15 minutes then add the cornflour mix and cook for a further 15 minutes.

Serve with toasted bread –  and to be really French add some cheese on top of the bread before topping the soup with it.

      It’s a very simple good soup – just be careful not to take it just before you’re going to be speaking to a lot of people hhhhhhhhh 🙂
