Fava beans are not in season at the moment, but I had a small bag of home-grown ones frozen from the end of last Spring. If I had fresh ones I would have used them raw in a salad, but as it was I preferred to shell them and fry in a teaspoon of coconut oil until they just started to brown.

For this salad/lunchbox idea you will need:

– fava beans fried in coconut oil and tossed for a few minutes

– canned tuna in sunflower or olive oil

– chunks of mature cheddar

– chunks of ricotta salata
