A very simple starter or side-dish that you can make in minutes even if you’re not experienced. Also suitable as party food.

You will need:

  • Fresh mushrooms – choose large flattish ones
  • Ham – cut into cubes (or bacon cubes)
  • Cheese – Leicester or cheddar will do

Remove the stalk of the mushrooms and discard. Wipe the mushrooms clean with a kitchen tissue so that a very thin layer comes off. This method of cleaning is preferable to washing as the mushroom tends to absorb water making the result soggy.

Lay them face down on an oven dish and fill with ham followed by cheese.

Cook for about 5-10 minutes under a very hot grill and serve hot.

    I do something similar with portobello mushrooms. I use sweet soft goat’s cheese instead and also add toasted pine nuts on top when it’s ready.
