I’ve always been fascinated by what makes certain foods go well together. Sometimes though, you’ll try something that sounds unlikely and it surprises you. My conclusion is that I’ll try anything once – in the kitchen. You never know when something is going to turn into a favourite. I make this spinach dish often with stilton (and mushrooms) but lately I’ve developed a flirtation with feta cheese. It must be the spring air.
And we all know that variety is the spice of life. So.
In this case: a combination of prawns, spinach, feta cheese and single cream. With a pinch of salt and generous dashings of pepper.
Start by cooking the spinach for a few minutes, tossing and turning as you go along. Add some cream when it is almost cooked through.
Then add the chopped up feta and prawns. At this point you’re only going to cook for a further 2-3 minutes, tossing continuously until the prawns are done.
Optional: cook onions in 2 tablespoons of curry powder before adding the spinach and continuing with the rest of the recipe.
Serve as is, piping hot, or with pasta / papadums.
