This was something we made in a few minutes. We’d had a large lunch and wanted a low carb light dinner to snack on in front of the tv. We found out that chilli and peanut go really well together.
Prepare 2 cups of chicken, diced, and 1 tablespoon of chopped chilli. Shallow fry until the chicken starts to brown at the edges.
Add 1 heaped tablespoon of chunky peanut butter. Keep cooking, stirring continuously so that the peanut butter evenly coats the chicken.
