Chicken breast is very versatile but can quickly get boring if you don’t come up with new ways to cook it. Be careful when you’re buying to avoid those which have been plumped up with water to weigh more (and hence cost more). You’ll notice when you cook it and all the moisture comes out!

This time I made chicken nuggets. There certainly is space for creativity when making nuggets since you can vary the spices – even in the same batch if you like.

I made mine with paprika. First beat an egg or two in a separate bowl. In another bowl prepare a mixture of flour or breadcrumbs and your chosen herb/spices.

Cut your chicken into cubes. First dip in the egg and then in the powder mixture. Some people prefer to dip twice (i.e. egg, powder, egg, powder) for better adherence. Fry until the chicken is cooked well.

‘lemon pepper’ is chicken’s best friend – and in this case works really well in the batter.

another cool trick is to add some flour to the beaten eggs to get even thicker batter čśÇ
