For this delicious snack or side dish you will need:

  • Medium to large tomatoes – choose firm, but ripe ones
  • Ricotta
  • Roasted pumpkin seeds or halved almonds

Cut the tomatoes lengthways and scoop out the insides. Fill with ricotta and cover with some pumpkin seeds which you have already roasted in a dry pan. Heat under a fan oven on medium heat until the ricotta just starts to brown at the top.
