1 apple, finely diced
1 medium carrot, finely diced
1/2 a fennel bulb, finely diced
1/2 cucumber, finely diced
2-3 cups mixed greens
handful chopped almonds/walnuts
1/4 cup grated Parmesan
juice of half a lemon
Olive oil and balsamic vinegar to taste
