The last pancake night was a rather special one. My partner and I were lucky enough to be invited to two events involving delicious (and different!) pancakes and good friends of course.
I didn’t have much time to prepare a filling, but I scoped out this recipe with very good results and it only took a few minutes to make. You will need:
- 3 medium bananasÂ firm bananas, peeled
- 1/2 tablespoon butter
- 3 tablespoons light brown sugar
- 1/4 cup dark rum
- 1/3 teaspoon ground cinnamon
Choose a large, flat pan. Melt the butter in a pan, taking care not to burn it. Add the brown sugar, rum and cinnamon. Mix it all together and then lay the banana slices next to each other. Do not overcrowd your pan. Cook for 2 minutes, then flip each slice, taking care not to break up the pieces. Cook for a further 2 minutes.

And round two at Matthew’s – spinach, mushroom and goat’s cheese pancake to start with. Then I was getting full… maybe space for half a pancake for dessert… nutella, banana, almond cream and crushed nuts mmmmm!
