After making this recipe, I developed an infatuation with barley. It’s good for you and it offers a great alternative to rice, pasta, couscous etc because I’m a great believer in the fact that boredom in the kitchen = overeating. Both of these should be avoided at all costs. Variety is key! 🙂

This is what I made for my lunch box; you will need:
– 100g cooked barley
– 1 large can of tuna in olive oil, drained
– 2 tablespoons capers
– 1 boiled egg, sliced
– 2 tablespoons plain natural yoghurt
– 1 teaspoon everyday herbs (by Tart Cases)
– 1/2 cup chopped Old Amsterdam or your favourite cheese
– 1 cup cooked beans – I used borlotti

Add some roasted nuts if you have any. Serve at room temperature.
