This is a delicious recipe that my partner came up with on a random weeknight. I had defrosted some chicken breast but was at a loss for ideas. Since we’re sticking to a low carb diet new recipes and concepts are a must at the moment. This was a really special treat that will definitely be repeated!

You will need:

  • 1 ripe avocado. Discover how to deal with preparing this here.
  • 1 medium onion
  • 1 chili deseeded
  • 1 or 2 cloves of garlic
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 3/4 teaspoon cayenne pepper
  • 1 can full fat coconut milk
  • chicken breast, cubed into bite size pieces

Use the blender to make a paste with all your ingredients except for the chicken and coconut milk.

Fry your chicken pieces in a very small amount of oil in a pan (or a very good non-stick pan and stir constantly) until it is almost cooked through. Add the mixture to the chicken in your pan and stir well. Add the coconut milk and cook for a further few minutes, making sure that the chicken is well cooked. You may need to serve with a spoon so that all the juicy goodness of the sauce can be eaten!

    I would serve this recipe as a sauce on a bed of rice.

      Yes it goes well with rice or quinoa too. This was a very low carb version of the recipe 🙂

    You could also serve it with riced cauliflower.
