I was about to make tomato soup, when something different happened. This is not a rare occurrence in my kitchen.

You will need (to make 2 portions):

2-3 large tomatoes, deseeded and chopped

1 onion, diced

3 cloves of garlic, diced

1 cup water

1 bay leaf

1 teaspoon harissa sauce or hot chili sauce or tabasco sauce – use amount according to taste and tolerance

1 teaspoon chili powder or 1 chili pepper, deseeded and diced

2 teaspoons tomato concentrate / kunserva

1 tablespoon apple cider vinegar or 1 teaspoon sugar

Fry the onion, garlic and chili in a tablespoon of oil of your choice for a few minutes until the onion is translucent. Add half of the water when your pan starts to dry up so as not to brown your ingredients.

Add the rest of your ingredients to the pan and cook for about 15 minutes on medium heat. Add salt and pepper according to taste. Pepper is important to make the ‘heat’ of this dish more interesting.

Remove the bay leaf and blend. Serve with pasta – here pictured with corn pasta.
