This is a quick snack I made for work. I got it ready the evening before in tupperware and stored it in the fridge. I reckon it would keep for 2 days if stored well in any case.

Remember to rinse your quinoa before cooking. This is to remove the saponins that can cause gastric irritation (I learned this the hard way).

Let it cool, then add whatever you fancy. I used these: Sliced boiled eggs, chopped gherkins, diced mortadella slices, 1 tablespoon or so of mayonnaise, olives, chunks of asagio, chopped sundried tomatoes and ground pepper. Mix thoroughly and enjoy!
