The sweets are from Taormina, but the rest of the food is from a restaurant in Gallo D'Oro (cannot remember the name of the restaurant at the moment!)

So yesterday I did these again....and I usually always end up with left over filling plus the inside of the courgettes and don't know what to do with it. So I thought of your other recipe http://muchadoaboutnoting.com/?p=2003 and decided to combine them. I basically added the courgette insides to the leftover filling mix and mixed them well, then just basically fried them like I would an omelette - not even any oil needed or anything...just a non stick pan. It won't solidify together like a normal omelette....but it still worked out well and was quite yummy! So thought I'd share :)

I make a very similar dish but never add any stock at all. the only thing i do is add seasalt, and i rinse the tin of tomatoes out with about maybe a couple of tablespoons of water to get all the tomatoey stuff out, and throw that in the pan.

Also i cook the zucchini (in a single layer under the grill, for a few minutes on either side, as i find that it's a bit too watery if you do that (as you can see by M's pic, she also has watery stuff around the actual dish). it also adds another dimension to the dish with the slightly charred taste :)
